Riki Kaspi’s Israeli Shakshuka

3tbl oil
1tbl ‘Riki Kaspi Spice Journey’ harissa (optional)
2tsp tomato paste
1tsp salt
1tsp ground cumin
1tsp harissa (optional)
2 red capsicums, diced
7 garlic cloves, finely chopped
5 large ripe tomatoes, chopped
1tbl brown sugar
6 eggs
3 burrata cheese
fresh baguette loaf, for serving

In frying pan, heat oil on high and fry capsicum until nearly burnt. Add the harissa (if using), salt, tomato paste, garlic, and cumin for 10 minutes and stir continuously. Add tomatoes and sugar and simmer for 10-15 more minutes. Test for seasoning and add some water if the sauce is getting too thick. Make holes in the sauce and break in eggs. Simmer for 10 minutes or until eggs are white but yolks are still runny. Serve with bread.
