4x Prawns
2x Finger Limes
Bunch Salt Bush

XO Butter
250ml veg oil 
24 cloves garlic, brunoise
12 shallots peeled and brunoise
2 large knobs ginger, peeled brunoise
6 red chillies brunoise
50 gm prosciutto ends brunoise
3 tbsp Korean chilli powder
1 tbsp smoked paprika
100gm conti bacon brunoise
3 tbsp dried shrimp soaked in hot water
10 tbsp. honey
Juice of 3 limes
6 tbsp. GF soy
1200 butter

XO Butter Instructions

  • Sweat the shallots in the veg oil till translucent
  • Add the garlic, Chilli, ginger, bacon and prosciutto and cook for a further 3 minutes
  • Once very fragrant- crumble the shrimp paste in and cook for another 5 mins on low.
  • Once everything is soft add the smoked paprika and Korean chilli and the diced butter.
  • Bring up to temp and infuse for 1 hour in a warm place.
  • Check for seasoning and depth of flavour
