Roasted Cauliflower

Cauliflower is not only a delicious addition to any meal but is low in calories, fat and carbohydrate and perfect as a tasty option if you are needing to keep an eye on the carbohydrate load of a meal.


1 whole cauliflower, leaves trimmed a little
1 litre vegetable stock
1 tsp fennel seeds
1 tsp chilli flakes
Handful of fresh herbs – oregano, thyme, parsley or whatever you have in the garden
1 tablespoon olive oil
1 tablespoon finely grated fresh parmesan


  • Place the stock, fennel seeds and chilli flakes into a large pot and bring to the boil.  Place the whole cauliflower into the pot, reduce heat and simmer for 20 minutes. 
  • Using two large forks, carefully remove the cauliflower and place into a lined baking dish.
  • Drizzle the cauliflower with the olive oil and sprinkle over the parmesan cheese. Bake in a moderate oven for approximately 25 minutes or until golden.
  • To serve, place on your favourite platter and top with fresh herbs.
