Chicken and Basil Foldies with Habanero Corn Salsa


For the Foldies
6 x 6in flour tortillas
1 packet pesto chicken tenders
1 cup grated mozzarella
½ cup whole egg mayo
2tbsp sriracha

For the Salsa
1 cob corn
½ red onion
1 small handful of coriander
1 x habanero chilli
1 small handful of mint
50ml sherry vinegar
50ml grapeseed oil


  1. Add oil to a pan and Mt Barker Chicken Basil Pesto Strips and cook.
  2. Create the sauce for the foldie by combing mayonnaise and siracha in a bowl. You can add as much or as little siracha as you like.
  3. To make the salsa add pre-steamed corn, habanero, red onion, coriander, mint, sherry vinegar and grapeseed oil and combine in a bowl.
  4. To create the foldies place the tortilla in a dry pan and drizzle the mayo mix on, add cheese, chicken and gently fold in half. Flip over and cook until the cheese is melted.
  5. Serve with the salsa.
